Hazlenut Pancakes

Sat Nov 5, 2005, 12:55 AM
Ok folks, how many of you enjoy giving the kids a treat for Sunday brunch? Or even Saturday brunch? I've got a recipe that'll give a new and exciting twist to the old favorite pancakes.

You need:

Cup measures
1 Large mixing bowl
1 Cup Milk (cows or soy)
½-1 Cup Sugar (add more or less according to tastes)
2 Cups Self raising flour (You can use plain flour, I find self raising gives a fluffier pancake)
2 Large Eggs
Butter or margarine (I find it tastes better then oil and is much healthier)
1 tablespoon Hazelnut Extract
And a large frying pan.

Method:

Most of you probably know how to make pancakes already, but there may be some kids who read this and don't. First off, I advise you if you are a young person, DO NOT try this recipe on your own, ask an adult to help or to supervise.

Combine milk, flour, sugar and eggs in a large bowl, mix with a hand mixer or electric mixer until there are no lumps.
Once you have made sure the base mix is smooth, add the Hazelnut extract and mix thoroughly.

Heat up a pan on the hotplate or stove, if you are under the age of 13, please please make sure that you have an adult around while being near a hot surface.
Add a knob of butter, and allow it to melt, once it is melted pour it from the pan into the pancake mix and again quickly stir it through.

Add another knob of butter, and melt it again, then place a ladle full of the pancake mix into the pan. Cook until bubbles appear on the side facing up, then carefully flip the pancake and cook for another 1 ½ minutes.

Serve the pancakes with:

Maple Syrup
Butter
Icing Sugar
Lemon Juice
Or
Fresh Fruit

Hope you all enjoy this recipe, I’m sure somebody else has written it before, so I’m not claiming that I invented this recipe.

***Note: This recipe can be adapted. You may use use any other flavoring or extract instead of Hazelnut. E.g.: orange extract. Adults can even try adding a shot of their favorite liquor as an added treat. ****
